Community Supported Agriculture
I’m very excited. Griggstown Farm (5 minutes from my house) began this year a Community Supported Agriculture (CSA) program. This is great.– local, all natural produced vegetables and herbs. For those that are unfamiliar withCSA’s, members buy a share of the yield for the season. Each week you pick up your share. Very simple. They’re also including an option to include locally sourced artisan breads and cheeses. What’s more is that you are supporting our local farms and helping to reduce the carbon footprint of the food industry by keeping your selection local. Hi Everyone! Here’s the recipe for granola from the NY Times that I’ve promised to post…
3 cups old-fashioned rolled oats
1 1/2 cups nuts (pecans, almonds, pistachios… your choice or combination)
1 cup raw pumpkin seeds
1 cup shredded coconut (unsweetened)
3/4 cup maple syrup
1/2 cup extra virgin olive oil
1/2 cup brown sugar
1 tsp. kosher salt
1/2 tsp. ground cinnamon
1/2 tsp. ground cardamom
3/4 cup dried fruit (any combination: cranberries, blueberries, raisins, apricots…)
Directions:
-Preheat oven to 300 degrees.
-In a large bowl combine: oats, nuts, seeds, coconut, maple syrup, olive oil, brown sugar, salt, cinnamon, and cardamom.
-Spread mixture on a rimmed baking sheet in an even layer and bake 45 minutes, stirring every 10 minutes, til golden.
-Transfer granola to a large bowl and add dried fruit, tossing to combine.
